1st Course Shrimp & roasted red bell pepper beignets with 2015 William Rose Dry Riesling
2nd Course Soft shell crab, butterhead lettuce, Louisiana remoulade, fried sour corn, crisp shallot with 2014 William Rose Prohibion Rose Dry Rosé
3rd Course Tasso mushroom tart, creole cream cheese, caramelized onion, bearnaise with 2014 William Rose Oregon Pinot Noir
4th Course Cajun chicken roulade, gumbo sauce, confit chicken rice cake, dirty black eyed peas, pickled trinity with 2012 William Rose Syrah Grenache
5th Course: King cake: pecan praline, spiced pudding, white chocolate glaze with 2012 William Rose Gewürztraminer
