At Willamette Valley Vineyards: Indulge this Valentine's Day 

Weekend at our Pinot & Chocolate Celebration, on 

Saturday and Sunday, February 13th and 14th from 11 am - 6 

pm.  This pairing event, hosted in our Estate Tasting Room 

and candle-lit Barrel Cellar, features Oregon Pinot Noir and

 decadent chocolate. Start with a wine and chocolate pairing 

in the Tasting Room, then head to our candle-lit Barrel Cellar

 for a Seated Tasting featuring three wines with chocolate-

infused bites.

Valentine's Pairing Wine Dinner


We are also hosting a Valentine's Pairing Wine Dinner on 

Friday and Saturday, February 12th and 13th at 7:30 pm. Our 

Winery Chef has created a custom four-course menu 

featuring chocolate-infused dishes paired with Pinot Noir. 

Cost to attend is $80, $70 for Wine Club Members, 

Shareholders and their guests and includes dinner, wine 

pairings and a $10 wine credit to be used that evening.

You may recall that last year we emailed you once-per-month with our "Grow with Us" series, documenting exciting changes and happenings as we settled in to the first year of the new winery and tasting room.

This year, we wanted to continue "saying hi" with a monthly update of what is happening at the winery, but change the content to focus to the wines, and the way we craft them: with vision, purpose, and intention.

With that in mind, we introduce, "Brooks Wine School," a series of informative tidbits about one wine (and the philosophy behind it) each month.

To Bleed or to Blend?

How does a Rosé get that alluring shade of pink? The most common method of making rosé is Saigneé (sen-yay), which in French means to bleed. In this process, juice is removed or "bled" off cold soaking grapes intended for red wine and that juice is then fermented into rosé.  

At Brooks, our Pinot Noir Rosé is crafted with vision and intention, meaning we do things a bit differently. Instead of bleeding, we prefer to blend.  Our winemaker, Chris Williams, purposefully selects specific vineyard blocks to be picked and made into rosé instead of just bleeding off from his reds. He chooses grapes from three Eola-Amity AVA sites—Crannell, Muska, and B&J Vineyards—giving Brooks rosé the earthy and red fruit flavors that are characteristic of our Pinot Noirs. Some of the fruit he sends straight to the press resulting in a close to clear colored juice.  For the rest, the juice and skins soak together for a short amount of time, around 6 hours, which is just enough contact to pull flavors, texture and color from the skins.   These grapes are then pressed and the juice is combined with the clear juice resulting in the mesmerizing jewel-pink hue.  This very intentional process creates a serious, dry rosé with luscious texture and vibrant fruit. 

The next time you drink rosé, ask how it was made and note the differences in flavor, sweetness, and especially texture resulting from the many different styles.

2015 Rosé of Pinot Noir
Electric pretty pale pink color. Watermelon Jolly Rancher, fresh Rainier cherry, pomegranate and orange peel. Apricot, rhubarb, raspberry, chamomile, slight spring herbal quality, light bodied with medium acidity and a steely, stony finish. This is a dry rose with pretty delicate fruit and more of an old world minerally bright style. Delicious paired with fish tacos, grilled pork or cold smoked salmon.

Led by our very own Director of Education, Jess Pierce, this year's events focus on looking at wine through a variety of lenses: history, art, geology, and more.

Each 2 hour session is like your favorite college class, but this time, you get to drink wine while you learn.

February is shaping up to be an exciting month for Seven of Hearts! With Valentine's Day on the horizon,  we hope that you will let us help you celebrate the special weekend by visiting the Tasting Room to enjoy a very special flight. The flight will feature 8 wines perfectly matched with small savory bites, and delectable chocolates provided by Honest Chocolates. It's also not too early to start thinking about joining us in March for the annual Wine Club Dinner at Park Kitchen in Portland. If you have trouble making it to the Tasting Room and live in the Portland area, fear not, we will be pouring a selection 
of our wines in Zupan's Markets across the greater Portland area during the month of February. Lastly, this past month we received the very exciting news that The San Francisco Chronicle voted the 2014 Willamette Valley Pinot Noir, "Best in Class" and the 2013 Gran Moraine Chardonnay received a "Gold Medal" so look out for these wines to be featured on our flight in the coming months. We hope that you have all recovered from the holiday season, and we look forward to seeing you soon!
